Summer Pasta
Serves 4
Ingredients
400g spiral pasta
200g snow peas, shredded
2 tbsp olive oil, plus extra to serve
1 red onion, finely sliced
1 red chilli, finely chopped
400g cherry tomatoes
2 tbsp juice
2 tbsp lemon rind
parmesan, finely grated
Method
Cook pasta in a large pan of salted boiling water as per packet instructions or until tender. Drain well and return to saucepan. Place snow peas into a bowl with boiling water for 1 minute then drain. Heat oil in a large non-stick pan over medium heat. Add onion and cook until soft then add tomatoes and cook until softened and heated through. Add peas and lemon juice and toss until combined. Stir vegetable mixture through the cooked pasta and season with salt and freshly ground black pepper. Top with parmesan, drizzled with lemon rind and oil to serve.
