Roast Pork Belly

This easy to follow recipe never fails and is perfect for entertaining in the weekend.

Roast Pork Belly

Serves 4

Ingredients

2 tbsp cinnamon
2 tbsp chilli powder
1 tbsp five spice
1/4 cup sea salt
750g pork belly, skin on
4 tbsp peanut oil
2 chillis, chopped
1 garlic clove, chopped
1 bunch spinach
steamed rice, to serve
Soy sauce, to serve

Method

Preheat oven to 160C. Place cinnamon, chilli powder, and five spice in a frying pan over medium heat and cook for 2-3 minutes. Place spices into a bowl and add sea salt. Rub the pork belly with half the oil then cover all over with the spice mixture. Place pork in a deep baking dish skin side down and cook for 60 minutes. Turn the pork to skin side up, crank up the oven to 200C and cook for another 30 minutes until the skin is crisp. Heat remaining oil in a large frying pan over medium heat. Add chilli and garlic and cook for 1-2 minutes. Add spinach and stir-fry for another minute, or until just wilted. Slice pork and serve alongside spinach, steamed rice, and soy sauce.
