A delicious salad to welcome Autumn that's packed full of goodness.

Roast Pumpkin, Walnut and Feta Salad

The great thing about this salad is its versatility. If you're not the biggest fan of pumpkin you can use kumara. Any leafy greens will do for this salad; kale, mixed salad leaves, crunchy cos.

Serves 4

Ingredients

1 pumpkin
1 red onion, thinly sliced
1 cup of walnuts, chopped
150g baby spinach
1 avocado, diced
Olive oil
125g of feta
Salt & Pepper

Dressing

1 lemon, juiced
4 Tbsp olive oil
2 tsp honey

Method

Preheat your oven to 180C.
Cut the pumpkin into chunks, rub over olive oil and season with salt and pepper.
Roast for 30 minutes then add chopped walnuts and roast for another 10 minutes.
To make your dressing, mix all the ingredients together in a jar and shake until combined.
Toss salad leaves, pumpkin, walnuts, red onion, avocado, and feta together and serve.
