Eggplant Pizza

Pizzas are a great quick and easy meal that gets the whole household involved.

Eggplant Pizza

Serves 4

Ingredients

2 large pizza bases
1 eggplant, thinly sliced
2 brown onions, thinly sliced
250g cherry tomatoes, halved
200g tomato paste
1 garlic clove, crushed
60g parmesan, grated
25g baby spinach
2 tbsp honey
2 tbsp olive oil, plus extra for serving

Pepper

Method

Preheat your oven to 240C. 
Place the onion, honey, olive oil, salt and pepper on a large oven tray and toss to combine. Cook, stirring halfway, for 15 minutes until soft.
Place the tomato paste, garlic, salt and pepper in a bowl and stir to combine. 
Place the pizza bases on 2 large oven trays, spread with the tomato mixture and top with the caramelised onion, eggplant, tomato, and parmesan. 
Cook for 8–10 minutes or until golden and crisp. 
Top with baby spinach, extra parmesan and salt and pepper, and drizzle with extra oil to serve.
