Baked Tarakihi in Adobo de Tamarindo

All the flavours of Mexico in one dish; tangy, sweet, smoky, spicy. Delicious!

Baked Tarakihi in Adobo de Tamarindo

Serves 4

Ingredients

2 large Tarakihi fillets, any firm white fish will do
2 capsicums, sliced
1 small red onion, sliced
6 tbsp of Tio Pablo Adobo de Tamarindo
2 cups cooked white rice
Fresh coriander leaves

Method

1. Preheat the over to 180°C.
2. Cover a baking tray with baking paper. Spread 3 tablespoons of Tio Pablo Adobo de Tamarindo onto the baking paper, place the fish fillets on top, then spoon the remaining Adobo de Tamarindo on top of the fish. Place sliced capsicum and onion on top of fish and fold the baking paper over to cover fish fillets.
3. Place tray into the oven and bake for 15-20 minutes, until fish cooked through.
4. Serve the fish on rice and garnish with coriander.
