Baked Salmon, Broccolini and Potatoes

A simple yet delicious tray baked dinner you can whip up in a matter of minutes

Baked Salmon, Broccolini and Potatoes

Serves 4


1kg gourmet potatoes, diced
4 salmon fillets
450g broccolini
2 tbsp lemon juice
1 shallot, finely chopped
olive oil
1/2 tsp dijon mustard


Preheat your oven to 230C. 
Toss diced potatoes with 2 tablespoons olive oil, salt and pepper. Place on a baking tray and roast for 15 minutes.
Brush salmon with 1 tablespoon olive oil and season with salt and pepper. Add the salmon to the baking tray and roast for another 5 minutes.
Turn the potatoes and add the broccolini to the baking tray. Drizzle with 1 tablespoon of olive oil and roast for another 3-4 minutes until broccolini is bright green.
To make the dressing, whisk lemon juice, shallots, dijon mustard, and 4 tablespoons of olive oil together until combined.
Drizzle over salmon and vegetables before serving.
